Word of the Week #1 (REVISED)

Word of the week: JUS (n)

As I was reading the menu at Pizza Antica in Santata Row on Saturday, I came across a word that was very unfamiliar to me. The menu read, "Herb roasted breast of chicken with warm white bean salad and sherry vinegar jus." I thought to myself, "what the heck is jus?"

Well for those who don't know, jus is mostly used to refer to a light sauce that is either placed on food or on the side as a dipping sauce.

Food dictionary epicurious.com defines the word as the following: "the French word for 'juice' which can refer to both fruit and vegetable juices, as well as he natural juices exuded from meat."

Here is an example:
Last night I cooked roasted chicken with a light, creamy sun dried tomato jus on the side.

  2. Good fix ... and informative too. I didn't know that "jus" could refer to fruit or vegetable juices as well as meat juices.
